2 cups Missus Chicky (hydrate with 2 cups water)

1 onion, chopped

1 green bell pepper, chopped

2 tbsp cooking oil

3 tbsp vegan mayo

Calamansi or lime (optional, for serving)
Directions
Start by placing 2 cups of Missus Chicky in a bowl. Pour 2 cups of water over the vegan chicken bits and let them soak until they are fully hydrated. This should take about 10 minutes.
In a large pan, heat 2 tablespoons of cooking oil over medium heat. Add the chopped onion and sauté until it becomes translucent and fragrant.
Toss in the chopped green bell pepper and continue to sauté for another 2-3 minutes, until the pepper softens slightly.
Add in the hydrated Missus Chicky (vegan chicken bits). Stir well to combine with the onions and bell pepper.
Stir in 3 tbsp of vegan mayo. Allow the mixture to simmer, stirring occasionally, until all the liquids are absorbed and the flavors meld together.
