2 tbsp cooking oil

1 onion, chopped

2 cloves of garlic, minced

1-2 bell peppers, chopped

1 cup of Salt Beefy (plant-based beef substitute)

1 cup + 1 cup of water

3 tbsp of taco seasoning

1 can of tomato sauce

3 cups of cooked beans (e.g. pinto beans)

Optional toppings: guacamole, tortilla chips, rice, or tortillas
Directions
Heat the cooking oil in a large skillet over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Sauté for about 5 minutes, or until the vegetables are soft and fragrant.
Stir in the Salt Beefy and 1 cup of water. Sprinkle the taco seasoning over the mixture and stir well to combine.
Pour in the can of tomato sauce. Fill the empty can with an additional cup of water to rinse out any remaining sauce, and add this to the skillet as well.
Add the cooked pinto beans to the skillet. Stir everything together and bring the mixture to a gentle simmer.
