2 tbsp. Olive Oil

½ Onion (chopped)

1 can Diced tomatoes

2/3 cup Chummy Chorizo

1 cup Spinach

1 cup Hummus

⅓ cup V Cheese of your choice (we used our homemade sunflower seeds cheese)

Directions
- Cook your preferred pasta to your liking.

Add 2/3 cup Chummy Chorizo to the mix.
- Stir in fresh spinach.
