Ingredients

2 tbsp cooking oil

1 onion (chopped)

4 cloves garlic (chopped)

1 can diced tomatoes

150g Soysage Scoff

1 cup rice (we used calrose)

1 cup corn
-
2-3 cups chopped cabbage

1 tbsp vegetable base (we used Better Than Bouillon)

1 cup water (less may be needed for other types of rice)

1 tsp salt (or to taste)

A dash of ground back pepper (optional)
Directions
- Hydrate Soysage Scoff by soaking it in water for 5 to 8 minutes.
In a cooking pan, sauté chopped onions and garlic.
Add diced tomatoes to the sautéed aromatics.
Incorporate the rehydrated Soysage Scoff and washed rice into the pan.
Then follow with the corn and the chopped cabbage.
Flavor with 1 tbsp vegetable base + 1 cup water (or sub with 1 cup of vegetable stock)
Season with salt and pepper to taste.
Cook covered on low heat for 20 minutes.
Turn off the stove and leave covered for about 8 minutes.
Gently stir and serve while warm.
