Ingredients

2 cups So-Yay Chunks (hydrated with 2 cups water)
Master Indian Korma Spice Kit
1 onion
1 tomato
Cooking oil
Salt to taste
1 can of coconut milk
½ cup ground almonds (we used peanuts for our version)

Directions

Hydrate So-Yay Chunks in water and add Korma spice powder for rich flavor.
Heat cooking oil in a preheated pan for the curry sauce.
Sauté chopped onions until golden brown.
Add water, Korma spice powder, diced tomatoes, ground peanuts, and brown sugar to the pan.
Introduce coconut milk and let the sauce simmer.
In a separate pan, sauté So-Yay Chunks with salt.
Combine sautéed So-Yay Chunks with the curry sauce, adding extra Korma spice for depth.
