So-Yay Chunks
- 1 cup water
- 3 tbsp soy sauce
- 2 tbsp braising sauce
- 2 tbsp Chinese cooking wine
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 tbsp cornstarch
- 1 tbsp oil
- 2 tbsp cooking oil
- Chopped garlic
- Yu choy (we used a 2lb. bag from Costco)
- 2 tbsp braising sauce
- 1/2 tbsp sugar
- 1/2 tbsp ground ginger
- 1/3 cup water + 2 tsp cornstarch (to make it saucy)
Marinade for 2 cups of So-Yay Chunks (Strips can also work):

- Marinate So-Yay chunks in a mixture of water, soy sauce, braising sauce, Chinese cooking wine, salt, sugar, cornstarch, and oil, then set it aside to absorb the flavors.
- Wash Yu choy, drain and set it aside.
- Adding cooking oil to a preheated pan.
- Sauté chopped garlic into the pan.
- Add marinated So-Yay chunks to the pan.
- Add washed Yu choy into the pan.
- Add braising sauce and cover pan.
- Add sugar to taste.
- Add ground ginger to the pan, enhancing the dish's aromatic and spicy notes.
- Add a mixture of water and cornstarch to the pan to thicken and bind the ingredients together.
- Serve.
