Ingredients

150g So-Yay Strips (hydrated)

2 tbsp oil

ยฝ cup garlic

1 cup onions
-
ยฝ cup mushrooms

1 cup ground peanuts

1 tbsp peanut butter
-
1 tbsp vegetable broth
-
1 tsp paprika
-
1 tsp minced ginger
-
1 tsp salt

2 ยฝ cup water

Steamed greens: french beans & gai lan (bok choy will be perfect, too)
Directions
Prep your So-Yay strips. Mix 1 part So-Yay strips with 3 parts water (by weight) and wait for 5-8 minutes.
Gently sautรฉ finely chopped onions and minced garlic in a drizzle of oil over medium heat until they turn golden brown
Add So-Yay Strips and sliced mushrooms to the pan with sautรฉed onions and garlic. Sautรฉ until they're golden brown and tender.
Sprinkle in paprika and continue sautรฉing.
Pour vegetable broth into the mix and stir. Let it simmer to enhance the flavors.
Add minced ginger to the mixture and stir.
Add water to the mixture.
Add salt to taste.
Top with steamed greens for added fiber!
